Greek pasta is a wonderful light dish you can serve as an app or as a side dish. It's healthy and filling too. This recipe was made special by Linda Lennon, professional taster, and home chef. Registered Dietitian and Certified Sous Chef/ facilitator Maria Adkins recreated her sister's greek salad so we could all have a taste of it in today's blog!
For this recipe you will need the following:
8 Chicken tenders, olive oil, onions, garlic, 2 cans petite diced tomatoes, artichoke hearts, kalamata olives, and feta cheese.
Instructions:
In skillet, heat olive oil and sautee approx. 8 chicken tenders until cooked through. Cover with foil and set aside on a separate dish.
Add a little more olive oil, sautee sliced/diced onion and garlic. After a few minutes add 2 cans petite diced tomatoes, artichoke hearts, and sliced kalamata olives.. sautee on low for 5-10 minutes. Add chicken diced up.
Cook pasta to al dente ~ drain and add tomato - chicken mix put in feta, toss. Put on a platter and toss feta on top.
